The other evening, my boys and I were in the mood for a little something sweet. We were out of chocolate chips, so we decided to deviate from our go-to chocolate chip cookie recipe and try something different. And I'm so glad we did! These cookies are delicious.
Soft and Chewy Oatmeal Raisin Cookies
Adapted from Robyn at Add a Pinch
1 cup butter, softened
1 cup packed brown sugar
1 cup sugar
1 Tablespoon vanilla extract
3 cups flour
1 cup oats
1 teaspoon salt
3/4 teaspoon baking soda
1 1/2 cups raisins
Preheat oven to 350 F. Cream the softened butter and sugars until light and fluffy. Add eggs and vanilla and mix until well combined. Add flour, oats, salt and baking soda. Mix well. Stir in raisins. Scoop dough onto a cookie sheet. (I used a large ice cream scoop, so each cookie is the same shape) Bake for 10-12 minutes (mine took the full 12 minutes) or until lightly browned.
